Things like “people skills” can be hard to quantify, but if you look for specific examples of when/how you solved a problem, resolved a customer complaint, led a team, brought people together for a common cause, etc., you will make your point without having to include clichéd and meaningless language (“outstanding interpersonal and communication skills”).
